A report from the U.S. Department of Agriculture regarding the Boar's Head production facility in Jarratt, Virginia, reveals serious hygiene deficiencies. Repeated violations of important safety rules were recorded, including avoiding standing water puddles that could promote Listeria growth. These reports not only highlight the company's failures but also underscore the tireless efforts of regulatory agencies and inspectors to prevent such cases.
USDA inspectors noted that temporary leaks were repaired with plastic or tarp coverings. They found meat residues on food contact surfaces, often as small as an inch, but nonetheless potentially dangerous. Puddles of blood, rancid odors in the cold storage areas, missing labels, and "black mold-like substances" on the walls were also among their findings. They additionally observed workers using their cell phones while operating equipment.
